Genmai Miso is made with brown rice, koji, soyabeans and sea salt, certified organic by OCIA. Usually polished rice is used as the outer bran of brown rice is highly resistant to any kind of mold or spoilage, including koji.
Ingredients : Soybeans, Water, Brown Rice, Sea Salt and Aspergillus Oryzae (koji).
Storage : Keep in cool place. Refrigerate when opened.
